This is probably one of my easiest recipes on the blog. It’s so quick that I made it while talking in a 15 minute conversation with my sister. I have used frozen salmon fillets but fresh would be even better. Salmon is my preferred fish as it tastes great and can hold firm and isn’t flaky, not to mention the numerous health benefits of eating salmon. I have used my 3 staple ingredients. which I do, for most of my savory recipes- garlic, red wine vinegar and red chili flakes. Those 3 ingredients can add so much flavor to any dish. This quickfire dish has all the elements to get your taste buds tingling. The cherry tomatoes add a great acidity to the dish and the crunch of the roasted pecans is a perfect accompaniment for the fish. The star ingredient of this dish, however, is the natural honey which gives it that sticky texture and adds a sweetness to the savoriness of the fish.
Honey Garlic Salmon fillets with roasted pecans and cherry tomatoes
Salmon fillets – 2
Minced garlic – 2tbsps
Red chili flakes-1tbsp
1)Heat up some oil on a pan. Add the minced garlic and red chili flakes. Sauté till golden brown. Then add some lime juice and red wine vinegar and mix well.
2)Season the salmon fish fillet with some salt. Then add the salmon fish fillets, skin side down, and pan fry for about 4 minutes on each side at medium heat with the glaze.
3)Add the honey during the last 2 minutes of cooking with the rest of the glaze and juices and baste it on the salmon. Take the fillets out.
4)Add the tomatoes and pecans to the same pan with the remaining juices and oil. Sauté for few minutes. Serve as shown and pour any remaining juices on the fish. Top it off with some finely chopped parsley stalks. Enjoy! 🙂
